Indulge in a rich and decadent tiger cake, lavishly coated in a velvety love mousse glaze, finished with toasted coconut flakes and creamy white chocolate chips - perfect for any special occasion.
Ingredients
  • 375g (2.5 cups) granulated sugar
  • 120g (1 cup) toasted coconut flakes
  • 250g (1 cup) white chocolate chips
  • 430g (3.5 cups) all-purpose flour
  • 150g (5.3 oz) unsalted butter, room temperature
  • 240ml (1 cup) whole milk, 15% fat
  • 3 large eggs
  • 10g (2 teaspoons) vanilla sugar
  • 7g (1.5 teaspoons) baking powder
  • 30g (2 tablespoons) cocoa powder
  • 15ml (1 tablespoon) water
Instructions

1. Preheat your oven to 180°C (350°F).

2. Whisk together 120g (1 cup) of flour, 7g (1.5 teaspoons) of baking powder, and 5g (1 teaspoon) of vanilla sugar in a medium bowl.

3. Combine 200g (1 cup) of granulated sugar and 2 large eggs in a large mixing bowl. Beat until light and fluffy.

4. Alternate adding the flour mixture with 240ml (1 cup) of milk, starting and ending with the flour mixture. Beat just until combined.

5. Melt 250g (1 cup) of chocolate in a double boiler or in 30-second increments in the microwave, stirring between intervals until smooth.

6. Fold the melted chocolate into the cake batter until well combined.

7. Pour the batter into a greased and floured cake pan.

8. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

9. Let the cake cool completely before glazing.

10. For the love mousse glaze, whip 115g (1/2 cup) of softened butter until light and fluffy.

11. Gradually add 190g (1.5 cups) of powdered sugar, beating until smooth and creamy.

12. Add 5g (1 teaspoon) of vanilla extract and mix until combined.

13. Spread the love mousse glaze over the cooled cake.

14. Garnish with toasted coconut flakes and white chocolate chips.
