Tomato Salad with Feta Cheese

Ingredients
- 400g / 14 oz tomatoes, cut into wedges
- 150g / 5.3 oz crumbled feta cheese
- 1 1/2 tablespoons / 22.5 ml olive oil
- 1 skinned and chopped red onion
- 1 tablespoon / 15 ml balsamic vinegar (optional)
- 1 sprig of parsley
- Freshly ground black pepper
- A pinch of flaky salt
Instructions
1. Preheat your oven to 350°F or 175°C, though we won't be using it just yet, it's good to have a warm kitchen.
2. In a large mixing bowl whisk together 2-3 tablespoons of olive oil, a pinch of salt, and a few grinds of black pepper until well combined.
3. Next, add 1 large chopped red onion to the bowl and mix until it's evenly coated with the dressing.
4. Cut 2 large tomatoes into wedges and add them to the bowl, gently tossing to combine with the onion mixture.
5. Now crumble 1/2 cup or 115g of feta cheese over the tomatoes and sprinkle a handful of chopped parsley on top for some freshness.
6. Finish the salad by drizzling 1-2 tablespoons of balsamic vinegar over it, if you're using it, and serve immediately.
