Tropical Fruit Delight
- 500ml/2.1 cups (US) tropical fruit juice (passion fruit flavor)
- 235ml/1 cup (US) light rum
- 115ml/0.49 cups (US) water
- 100g/3.5 oz frozen passion fruit pieces
- 30g/2 tablespoons (US) granulated sugar
- 15ml/1 tablespoon (US) freshly squeezed lime juice
- Ice cubes
- Lime wedges, for garnish
- Tonic water, to serve
1. Combine 200g (7 oz) granulated sugar and 250ml (8.4 fl oz) water in a saucepan and heat over medium heat, stirring until the sugar dissolves. Let the mixture cool to room temperature, around 20°C (68°F).
2. Divide 250g (8.8 oz) frozen passion fruit pieces among four glasses.
3. In a large bowl, combine 120ml (4 fl oz) light rum, 250ml (8.4 fl oz) tropical fruit juice, and 30ml (1 fl oz) freshly squeezed lime juice. Stir the mixture well to combine all the ingredients.
4. Pour the rum mixture over the passion fruit in the glasses. Add a handful of ice cubes to each glass and top with 60ml (2 fl oz) tonic water. Stir gently to combine and garnish with a lime wedge. Serve the drinks immediately and enjoy!
