Tuna Melt Panini

Ingredients
- 120g / 4.3 oz (8 tbsp) unsalted butter, softened to room temperature (or 2 tbsp for less richness)
- 6-8 slices white bread (170g / 6 oz), preferably day-old bread for crispy results
- 170g / 6 oz cheese slices, approximately 28% fat content (roughly 6 slices)
- 80g / 2.8 oz (1/2 cup) crème fraiche
- 170g / 6 oz canned tuna in water, thoroughly drained of liquid
- 15g / 0.5 oz (1 tbsp) chili sauce
- 5g / 0.2 oz (1 tsp) sambal oelek
- Salt and freshly ground pepper, added according to taste preferences
Instructions
1. Preheat your grill or grill pan to 200°C (392°F) medium-high heat.
2. In a bowl, combine the tuna, crème fraiche - or sour cream if you prefer, chili sauce, and chili paste, also known as sambal oelek. Season with salt and pepper to your liking.
3. Butter one side of every bread slice. Place a slice of cheese on the unbuttered side of half the slices.
4. Spoon the tuna mixture on top of the cheese, then place another bread slice, buttered side up, on top to create a neat sandwich.
5. Grill the sandwiches for around 2-3 minutes on each side, until the bread is golden brown and the cheese has melted.
6. Cut into triangles and serve with pickled cucumbers - or cornichons if you're feeling fancy, a side salad, and a few tomatoes.
