Tuscan Brownies

- 4 large eggs
- 225g / 1 ¾ cups granulated sugar
- 160g / 1 ¼ cups all-purpose flour
- 220g / 1 ¾ cups unsweetened cocoa powder
- 115g / ½ cup light syrup, at room temperature
- 60g / 4 tablespoons unsalted butter, softened
- 6g / 1 ¼ teaspoons salt
- 6g / 1 ¼ teaspoons vanilla sugar
- 50g / 1.76 oz dark chocolate, for garnish
1. Preheat your oven to 350°F or 175°C and line a 9x13 inch baking dish with parchment paper.
2. Whisk together 250g or 2 3/4 cups of flour and 5g or 1 teaspoon of salt in a medium bowl, then set aside.
3. Using an electric mixer, beat together 250g or 1 1/4 cups of sugar and 115g or 1/2 cup of butter in a large bowl until light and fluffy, which should take about 2 minutes.
4. Beat in 2 eggs one at a time, followed by 10g or 2 teaspoons of vanilla sugar.
5. In a separate bowl, whisk together 60g or 1/2 cup of cocoa powder and 60g or 1/4 cup of syrup until smooth.
6. Add the flour mixture to the chocolate mixture and mix until just combined.
7. Pour the batter into the prepared baking dish and smooth the top.
8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
9. Remove from the oven and let cool completely in the pan.
10. Once cooled, cut into squares and garnish with dark chocolate shavings if desired.
