Vanilla Dream Cake with Daim
Ingredients
- 375 g (13.2 oz) cold unsalted butter
- 750 g (3 cups) confectioner's sugar
- 940 g (7½ cups) all-purpose flour
- 36 g (3 tablespoons) vanilla sugar
- 12 g (2½ teaspoons) baking powder
- Confectioner's sugar, for dusting
- 100 g (3.5 oz) Daim bar, finely crushed
Instructions
1. Preheat oven to 180°C (350°F)
2. Grease and flour two 20 cm (8-inch) round cake pans
3. Sift together flour, confectioner's sugar, vanilla sugar, and baking powder in a large bowl
4. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs
5. Divide dough evenly between the prepared pans and press into an even layer
6. Bake for 25 to 30 minutes, until golden and a toothpick inserted in the center comes out clean
7. Cool cakes completely in the pans on a wire rack
8. Place one cake layer on a serving plate
9. Sprinkle crushed Daim evenly over the surface
10. Top with the second cake layer
11. Generously dust with confectioner's sugar before serving
