Vegetarian Tortellini with Spinach in Tomato Sauce

Ingredients
- 500g / 1.1lb canned crushed or peeled tomatoes
- 250g x 2 / 8.8oz x 2 packets of tortellini with vegetarian filling
- 250ml / 1 cup water
- 30g / ½ cube vegetable broth
- 20g / 2 tablespoons olive oil
- 10g / 2 cloves of garlic
- 100g / 1 small yellow onion
- 6g / 1 teaspoon salt
- 1.25g / 1/4 teaspoon black pepper
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat a generous amount of olive oil over medium heat. Add the diced onion and sauté until translucent, then add the minced garlic and cook for a further minute.
3. Next, add the canned tomatoes, vegetable broth, and water to the skillet. Bring the mixture to a gentle simmer, stirring occasionally.
4. Reduce the heat to low and allow the sauce to cook for 20 minutes, stirring from time to time, to develop a rich flavour.
5. Season the sauce with salt and pepper to your taste.
6. While the sauce is cooking, cook the tortellini according to the package instructions. Once cooked, drain the tortellini and serve with the freshly made tomato sauce.
