There's something so satisfying about digging into a warm veggie calzone filled with melted mozzarella and fresh spinach. It's my go-to comfort food when I'm craving something hearty yet light. The crispy side salad with its tangy dressing perfectly balances out the richness of the calzone. I find myself making this recipe often for quick and easy dinners that still feel a bit special. The way the cheese stretches when you pull apart the calzone, and how the simple flavors just work together, it's a real treat. Ingredients
  • 350 g all-purpose flour (2 1/3 cups)
  • 12 g salt (2 tsp)
  • 2.5 g black pepper (1 1/4 tsp)
  • 5 ml olive oil (1 tsp)
  • 150 g frozen and thawed baby spinach, drained (1 1/2 cups)
  • 100 g shredded mozzarella cheese (1 cup)
  • 100 g grated mixed cheese, 31% fat (1 cup)
  • 50 g egg, lightly beaten for brushing (1 large egg)
  • 5 g flaky sea salt (1 tsp)
Instructions

1. Preheat your oven to 220°C (425°F).

2. In a bowl, mix the drained spinach with mozzarella cheese, 1 tsp salt, and 1 tsp black pepper until well combined.

3. On a floured surface, roll out the pizza dough to about 6 mm (1/4 inch) thick.

4. Place the spinach mixture on one half of the dough, leaving a 1 cm (1/2 inch) border around the edges.

5. Fold the other half of the dough over the filling and press the edges together to seal.

6. Crimp the edges with a fork to ensure a tight seal.

7. Brush the top of the calzone with beaten egg and sprinkle with flaky sea salt.

8. Place the calzone on a baking sheet lined with parchment paper.

9. Bake in the top part of the oven for about 15 minutes, or until golden brown.

10. While the calzone bakes, prepare the pizza salad by finely chopping the kale.

11. In a bowl, combine the chopped kale with halved cherry tomatoes, 1 tbsp olive oil, 1 tbsp vinegar, 1/4 tsp salt, and a pinch of spices to taste.

12. Optionally, add a handful of arugula to the salad for extra flavor.

13. Serve the salad alongside the hot calzone.
