White Bean Salad with Sun-Dried Tomatoes

Ingredients
- 250g/8.8 oz sun-dried tomatoes,
- 475ml/2 cups water,
- 20g/1/4 cup fresh parsley or cilantro, chopped (optional),
- 400g/14.1 oz can white beans, drained and rinsed,
- 6g/2 cloves garlic, minced,
- juice of ½ lemon (about 30g/2 tbsp),
- 120ml/1/2 cup olive oil,
- salt and freshly ground black pepper to taste
Instructions
1. Combine the white beans, lemon juice, garlic, and chopped parsley or cilantro in a large bowl.
2. Whisk together 60ml/2 fl oz olive oil and 30ml/1 fl oz water in a small bowl.
3. Add 120g/4 oz sun-dried tomatoes to the bowl with the olive oil mixture and toss to coat the tomatoes evenly.
4. Add the sun-dried tomato mixture to the bowl with the white beans and toss gently to combine.
5. Season with salt and freshly ground black pepper to taste.
6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
