Winter Kale and Walnut Pie with Aged Cheddar
Ingredients
- 240 g (2 cups) all-purpose flour
- 1/4 teaspoon salt
- 115 g (1/2 cup) cold unsalted butter, cut into small pieces
- 30 ml (2 tbsp) ice water
- 225 g (1 head) curly kale, stems removed and chopped
- 50 g (1/2 cup) chopped walnuts, toasted
- 50 g (1/2 cup) grated aged cheddar cheese
- 80 g (1/2 cup) dried figs, chopped
- 60 ml (1/4 cup) extra-virgin olive oil
- Salt and freshly ground black pepper to taste
Instructions
1. Combine flour and salt in a large bowl
2. Cut in cold butter using a pastry cutter until mixture resembles coarse crumbs
3. Drizzle ice water while mixing until dough just holds together
4. Form into a disk, wrap in plastic, and chill 30 minutes
5. Preheat oven to 375°F (190°C)
6. Roll chilled dough into a 12-inch circle on floured surface
7. Transfer to parchment-lined baking sheet
8. Toss kale, toasted walnuts, aged cheddar, olive oil, salt, and pepper in bowl
9. Spoon mixture onto dough center leaving 2-inch border
10. Scatter dried figs evenly over filling
11. Fold dough edges over filling, pleating as needed
12. Bake 35-40 minutes until crust is golden and filling bubbles
13. Cool 10 minutes before slicing
