Winter Pizza with Kale and Feta Cheese

Ingredients
- 450ml / 1 1/2 cups crème fraiche (38%)
- 250g / 1 cup dried cranberries
- 250g / 1 cup crumbled feta cheese
- 2 sprigs of chopped kale
- 30g / 2 tablespoons honey
- Seeds of 1 pomegranate
- 1 package of thawed puff pastry (approx. 320g / 11.3 oz)
- Salt and pepper to taste
- 30ml / 2 tablespoons olive oil
Instructions
1. Preheat your oven to 400°F (200°C).
2. Roll out the puff pastry on a lightly floured surface until it reaches a thickness of about 1/8 inch (3 mm).
3. Spread the crème fraiche evenly over the pastry, making sure to leave a 1-inch (2.5 cm) border around the edges.
4. Top the crème fraiche with crumbled feta cheese, chopped kale, and dried cranberries.
5. Drizzle honey over the toppings, then sprinkle salt and pepper to taste.
6. Fold the edges of the pastry up over the toppings to create a crust.
7. Brush the crust with olive oil and bake in the preheated oven for 25-30 minutes, or until it's golden brown.
8. Remove from the oven and let cool for a few minutes before slicing and serving.
