Cheesy Club Sandwich Waffles

Cheesy Club Sandwich Waffles
This club sandwich gets a fun upgrade with a crispy twist - chicken, bacon, lettuce, tomato, and red onion tucked inside a golden cheesy waffle that serves as the bun. It's hearty and satisfying with a nice crunch in every bite. The waffle's warmth softens the greens just slightly while keeping everything else crisp. Comfort food meets creative sandwich-making in a way that feels familiar yet totally fresh.
Ingredients
  • 4 chicken breasts (about 1.3 lbs)
  • 8 slices bacon
  • 4 large eggs
  • 120g (1 cup) all-purpose flour
  • 240ml (1 cup) milk
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 150g (1 1/2 cups) shredded cheddar cheese
  • 2 tomatoes, diced
  • 1 red onion, chopped
  • 4 lettuce leaves, shredded
  • Mayonnaise (optional)
Instructions

1. Preheat the waffle iron according to the manufacturer's instructions.

2. In a bowl, whisk together the flour, milk, 2 eggs, baking powder, and salt until smooth.

3. Stir in the shredded cheddar cheese until well combined.

4. Cook the bacon in a skillet over medium heat until crispy. Remove to a paper towel-lined plate to drain excess grease.

5. Season the chicken breasts with salt and pepper. In the same skillet, cook the chicken over medium heat for 5-6 minutes per side until golden and cooked through.

6. Pour 1/4 of the waffle batter onto the hot waffle iron. Cook for 3-5 minutes or until golden brown and crisp, brushing the iron with oil between batches. Repeat with remaining batter.

7. To assemble, place one waffle on a plate. Spread with mayonnaise if desired. Top with a chicken breast, 2 slices of bacon, lettuce, tomato, and red onion.

8. Secure with a toothpick if needed. Serve the cheesy club sandwich waffles warm.
