Cheesy Club Sandwich Waffles
- 4 chicken breasts (about 1.3 lbs)
- 8 slices bacon
- 4 large eggs
- 120g (1 cup) all-purpose flour
- 240ml (1 cup) milk
- 2 tsp baking powder
- 1 tsp salt
- 2 tbsp vegetable oil
- 150g (1 1/2 cups) shredded cheddar cheese
- 2 tomatoes, diced
- 1 red onion, chopped
- 4 lettuce leaves, shredded
- Mayonnaise (optional)
1. Preheat the waffle iron according to the manufacturer's instructions.
2. In a bowl, whisk together the flour, milk, 2 eggs, baking powder, and salt until smooth.
3. Stir in the shredded cheddar cheese until well combined.
4. Cook the bacon in a skillet over medium heat until crispy. Remove to a paper towel-lined plate to drain excess grease.
5. Season the chicken breasts with salt and pepper. In the same skillet, cook the chicken over medium heat for 5-6 minutes per side until golden and cooked through.
6. Pour 1/4 of the waffle batter onto the hot waffle iron. Cook for 3-5 minutes or until golden brown and crisp, brushing the iron with oil between batches. Repeat with remaining batter.
7. To assemble, place one waffle on a plate. Spread with mayonnaise if desired. Top with a chicken breast, 2 slices of bacon, lettuce, tomato, and red onion.
8. Secure with a toothpick if needed. Serve the cheesy club sandwich waffles warm.
